Drain and rinse black beans and corn.

Add rinsed black beans and corn and both cans of Rotel to the crock pot

In a large pot on the stove, heat up two tablespoons of olive oil and add chopped onion and green peppers. Saut? until softened.

Add enchilada sauce and broth to onions and peppers.

Allow sauce to simmer for a few minutes, the add mixture to crockpot.

Add chicken breasts to crock pot.

Add spices and chopped cilantro to crock pot.

Cook for 7-8 hours. 1 hour before serving, remove chicken breasts and shred chicken then return to crock pot.
