Ingredients

6 servings
  1. 4 lbpork sirloin roast
  2. 1 tbspeach, chili powder, cumin, salt, black pepper
  3. 2 largecans enchilada sauce
  4. 1 smallonion, diced
  5. 1 smallcan diced green chiles
  6. 2 cupgrated cheddar cheese
  7. 1 cupgrated queso fresco
  8. 1 bunchcilantro
  9. 1tortillas
  10. 1lime

Steps

  1. 1

    mix spices and rub on roast. add a little liquid to pan. bake at 300 4-5 hrs or until pork is pull apart tender.

  2. 2

    in a heavy dutch oven, heat a tbs butter and saute onion until tender but not brown.

  3. 3

    add pulled pork, green chiles, and 1/2 can enchilada sauce. mix well

  4. 4

    heat through. check seasoning and add more if desired.

  5. 5

    spread half of remaining opened can of sauce on bottom of casserole dish.

  6. 6

    roll up enchiladas and place in baking dish.

  7. 7

    pour all of the remaining sauce over enchiladas.

  8. 8

    blend cheeses and spread evenly over top.

  9. 9

    bake until bubbly and cheese starts to brown.

  10. 10

    serve with sour cream. garnish with cilantro and a lime wedge

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
