Ingredients

4 servings
  1. 2 cupchopped chicken
  2. 1bell pepper, chopped
  3. 4 ozcream cheese
  4. 1/2 cupchunky salsa
  5. 8flour tortillas
  6. 1/4 lbvelveeta cheese, cut into 1/2 in cubes
  7. 1 tbspmilk

Steps

  1. 1

    heat oven to 350

  2. 2

    mix chicken, peppers, cream cheese, and 1/4 cup salsa in sauce pan

  3. 3

    cook on low heat until cream cheese is melted

  4. 4

    spoon 1/3 cup mixture in the center of each tortilla, roll up

  5. 5

    place seam side down, in lighlt greased 13 x 9 baking dish, set aside

  6. 6

    cook velveeta and milk in saucepan on low heat until velveeta is completely melted, stirring frequently

  7. 7

    pour over enchiladas, cover with foil

  8. 8

    bake 20 minutes

  9. 9

    top with remaining salsa
