  • 2 1/2boneless beef pot roast
  • 1/2 tspblack pepper
  • 4 mediumpotatoes, cut in quarters
  • 2 cupbaby carrots
  • 1stock celery, cut into 1 in pieces
  • 1 mediumdiced tomatoes
  • 10 3/4 cantomato soup
  • 1 cupwater
  • 1 tbspdried basil leave
  • 1 tspdried oregano leaves
  • 1 tspdried parsley flakes, crushed
  • 1 tspvinegar

  1. 1

    season roast with black pepper

  2. 2

    put potatoes, carrots, celery, and tomato in slow cooker, top with roast

  3. 3

    stir soup, water, garlic, basil, oregano, parsley, vinegar in a medium bowl

  4. 4

    pour over the roast

  5. 5

    cover, cook low 10-12 hours
