  1. 64-inch portobello mushroom caps
  2. 2Leeks
  3. 6 cloveGarlic
  4. 1 1/2 tbspChopped fresh thyme
  5. 1 lbFresh baby spinach
  6. 4 ozGoat cheese
  7. 2 tbspPine nuts

  1. 1

    Preheat oven to 400°F. Line baking sheet with parchment paper.

  2. 2

    Spray mushroom caps with cooking spray. Season caps with salt and pepper. Roast 10 minutes and flip.

  3. 3

    Meanwhile, sauté leeks, garlic and thyme. Add spinach until wilted.

  4. 4

    Stir in goat cheese and pine nuts. Season with salt and pepper if desired.

  5. 5

    Fill mushrooms with spinach mixture.

  6. 6

    Bake 25 minutes or until brown and mushrooms are tender.
