Marinade chicken in ginger, soy sauce and garlic for 15 minutes

Spray large frying pan with cooking spray and put in the chicken, brown from both sides to seal the moisture inside.

Then throw in shallots, scallion whites and mushrooms, stir fry adding chicken stock a little at a time, until shallots become slightly translucent. You can leave a little of the stock to deglaze pan at the end.

Add marinade, oyster sauce and hoisin sauce and continue to stir fry for a couple of minutes.

Serve of a bed of rice and garnish with the rest of the scallions.
