Ingredients

4 servings
  1. 1big chicken breast (cut into fillets)
  2. 4shallots (sliced thin)
  3. 4scallions ( white part chopped small, green part sliced thin)
  4. 4garlic cloves (chopped small)
  5. 8white mushrooms (sliced thick)
  6. 2 tspoyster sauce
  7. 1 tsphoisin sauce
  8. 1 cupsoy sauce
  9. 1/2inch fresh ginger (finely chopped)
  10. 2 cupchicken stock
  11. 1light cooking spray
  12. 2 cupbrown rice

    Marinade chicken in ginger, soy sauce and garlic for 15 minutes

  2. 2

    Spray large frying pan with cooking spray and put in the chicken, brown from both sides to seal the moisture inside.

  3. 3

    Then throw in shallots, scallion whites and mushrooms, stir fry adding chicken stock a little at a time, until shallots become slightly translucent. You can leave a little of the stock to deglaze pan at the end.

    Add marinade, oyster sauce and hoisin sauce and continue to stir fry for a couple of minutes.

  5. 5

    Serve of a bed of rice and garnish with the rest of the scallions.
