Ingredients

1 serving
  1. 2/3 cupcanned crushed tomatoes with basil, with juice
  2. 1 tspcapers
  3. 1/2 clovegarlic, finely chopped
  4. 8 ozraw wild salmon fillet
  5. 1nonstick cooking spray
  6. 1 pinchsea salt
  7. 1ground black pepper
  8. 1/2 cupcanned chickpeas (garbanzo beans), drained

Steps

  1. 1

    Combine tomatoes, capers, and garlic in a small bowl; set aside.

  2. 2

    Season both sides of salmon fillet with salt and pepper if desired.

  3. 3

    Heat medium skillet lightly coated with spray over medium-high heat.

  4. 4

    Add salmon; cook for 2 minutes on one side. Turn.

  5. 5

    Layer tomato mixture and chickpeas over salmon in skillet; cook, covered for 5 minutes, or until salmon is cooked through and flakes easily when tested with fork.
