Ingredients

4 servings
  • 1 cupcouscous
  • 1.5 cupwater
  • 1Bou chicken bouillon cube
  • 10dried apricots, diced
  • 1/4 cupsliced almonds
  • 3spring onions, sliced
  • 1 handfulcilantro, minced
  • 1 handfulmint, minced
  • 1lemon, juiced
  • 1/4 cupolive oil

Steps

  1. 1

    Bring the water and bouillon cube to a boil in a medium pot. Add the cous cous, cover, and cook on medium. Combine the apricot, almonds, onions, and herbs in a bowl.

    When the couscous has absorbed the liquid. Turn the heat off and add the apricot mix. Add the lemon juice, and olive oil and toss.
