Pineapple jicama

We needed something fun and bright for 5 de mayo celebrations I had 2 jicama 1 whole pineapple that's how it became the best salsa dip of the party it could be eaten as a salad or as a chunky dip.

We needed something fun and bright for 5 de mayo celebrations I had 2 jicama 1 whole pineapple that's how it became the best salsa dip of the party it could be eaten as a salad or as a chunky dip.

dice pineapple, jicama & red pepper

chop cilantro & garlic
- 3
combine lemon juice, oil, salt, pepper & garlic let it sit for 5 minutes so the garlic dont taste so raw. then mix pineapple and jicama cover and refrigerate for 30 minutes. While it sit in the fridge is marinating all the ingredients.
