I have been diagnosed with Celiacs Disease since I was 16, so I've had to learn to cook in a way my body can enjoy it without the pain. I have a joke among my friends, Waffle Crush Wednesday, to joke at the idea of Woman Crush Wednesdays. Waffles are my #wcw at least once a month.

Mix oil, egg whites, and milk together in a bowl

In a separate bowl, sift together the rice flour, tapioca flour, potato starch, baking powder, sugar, and salt.

Add flour mixture to the liquid mixture and whisk together (depending on your preference you can add extra milk if needed)

Allow waffle iron to heat to medium heat
- 5
Once heated, if waffle iron is not non-stick, oil the iron and ladle one or two scoops on iron, spreading out evenly across.

Sprinkle chocolate chips on top if wanted

Allow to cook for 3-5 minutes

Lift iron and peel off, and repeat until out of batter
