Add water (about body temperature), yeast, sugar and 1/2 cup flour into a mixing bowl and stir well.

Let this sit for 20 minutes, it will get bubbly.

Add olive oil, salt, mixed herbs, and 2 cups of flour to the mix and stir with a wooden spoon until together enough to turn out.

Turn out onto a lightly floured work surface. Knead for 10 minutes while adding more flour a little at a time. Do not add too much, just enough to stop it sticking to the surface as you knead.

It should result in a soft, elastic, slightly sticky dough.

Form dough into a ball and place in a large oiled bowl. Drizzle a few drops of oil and coat the top. Cover with a kitchen towel and place in a warm space for 2 hours, or until it doubles in size.

Punch down dough and split into two balls. Place in large zip lock bags and refrigerate overnight.

When ready to use allow dough to come up to room temperature and then roll out.

This will provide 2 medium pizzas or one large (8 servings = 1/4 of medium per serving or 1/8 large)
