Wash plantain and slice to desired shape and sprinkle salt on it.

Break eggs and whisk. Add a pinch on salt and set aside

Pour groundnut oil in a hot pan. Once the oil is hot, fry plantain, remove and drain in paper towel. Once it’s ready, dice onions, tomatoes, pepper and set aside.

Heat up frying pan and add little vegetable oil; add onions, pepper and tomatoes and stir continously for about 2 minutes

Then pour in the eggs. Scrambled and once it’s caked, turn off heat and serve with fried plantain
