  1. 6boneless, skinless chicken halves cut lengthwise into 1/2 in strips
  2. 3eggs, beaten
  3. 2 cupItalian-style seasoned, fine, dry bread crumbs
  4. 1/4 cupcanola oil, divided
  5. 8 ozmushrooms, sliced, 3 1/2 cups
  6. 1 cuppasta sauce from a jar
  7. 12 ozmozzarella cheese, thinly sliced
  8. 1 packagesegg noodles
  9. 1/4 cupchopped fresh parsley

    In bowl combine chicken and egg; refrigerate 5 hours.

  2. 2

    Preheat oven to 350

  3. 3

    Coat chicken in bread crumbs; lay in single layer on baking sheet.

  4. 4

    In non-stick skillet heat 2 Tbs. oil over high heat. Add 1/2 of chicken strips; brown 1 min per side. Repeat with remaining oil and chicken.

  5. 5

    Place chicken in single layer in 11x7 baking dish. Top with mushrooms and sauce, then cheese.

  6. 6

    Cover; bake 30 min.

    Uncover; bake 30 min.

  8. 8

    Prepare noodles according to directions.

  9. 9

    Serve chicken over noodles. Sprinkle with parsley
