Ingredients

  1. 8 ozChicken breast, cut into strips
  2. 4 tbspOlive oil, divided
  3. 1Shallot, chopped
  4. 1 cloveGarlic, chopped
  5. 1/4 cupMarsala wine or chicken broth
  6. 4 sliceProsciutto, sliced
  7. 4Bay leaves
  8. 1 tspThyme and parsley
  9. 2 tbspBread crumbs
  10. 2 tbspParmesan cheese, grated, divided
  11. 1 pinchSalt and pepper
  12. 1Egg
  13. 1/4 cupHeavy cream

Steps

  1. 1

    Brown chicken in 2 tablespoons of oil over medium heat.

  2. 2

    Add shallot and garlic.

  3. 3

    Deglaze with Marsala.

  4. 4

    Take pan away from heat and flambé.

  5. 5

    Return to stove. Flame will go out in a minute.

  6. 6

    Add prosciutto and herbs.

  7. 7

    Sprinkle in breadcrumbs and 1 tablespoon Parmesan.

  8. 8

    Drizzle in 1 tablespoon of oil to keep moist.

  9. 9

    Discard bay leaves.

  10. 10

    Pulse together all ingredients in food processor.

  11. 11

    Add egg, cream, remaining Parmesan and olive oil.

  12. 12

    Pulse again. Chill before filling ravioli.
