Beef Stuffed Cabbage Low Carb

This is my take on this Polish classic. Without the rice it is low carb friendly. Each cabbage roll has approximatesly 5.5g of Net carbs. I eat about two per meal, three if I'm really hungry, or it could be served with a side salad.

Ingredients

  1. Tomato Sauce
  2. 1 cancrushed tomatoes (28 oz.)
  3. 1 tbspworcestershire sauce
  4. 1 tbsplemon juice
  5. 1/3 cupSweetener
  6. 2garlic cloves, minced
  7. Beef Stuffing
  8. 1 1/2 lbground beef
  9. 1 smallonion, finely chopped
  10. 1egg
  11. 1 tspsalt
  12. 1/2 tspground black pepper
  13. 1 largecabbage, cored.

    In a large pot, bring 1 inch of water to a boil over high heat. Place cored cabbage in water, cored-side down; cover pot, and reduce heat to low. Steam 20 minutes, or until cabbage leaves pull apart easily. Drain, set aside, and let cool.

    Preheat oven to 350° F.

  3. 3

    In a medium bowl, combine tomatoes, sweetener, garlic, Worcestershire sauce and lemon juice; mix well and set aside.

    In a large bowl, combine ground beef, onion, egg, salt, pepper, and 1/3 cyp tomato sauce and mix well. By hand works best.

    Place 1 cup tomato sauce in bottom of 13x9 baking dish.

    Peel 12 cabbage leaves off the head and trim off thick stem.

  7. 7

    Divide Beef Stuffing into 12 equal portions. Place a portion of Beef Stuffing in center of cabbage leaf. Starting at core end, make a roll, folding over sides and rolling loosely. Place seam-side down in baking dish; repeat with remaining cabbage leaves and meat mixture.

    Spoon remaining tomato sauce evenly over top of cabbage rolls and cover.

    Bake 75 minutes or until beef is no longer pink.
