Ingredients

  1. 1 lbGround Turkey
  2. 1 tbspExtra Virgin Olive Oil
  3. 1/4 tspCumin
  4. 1/4 tspChili Powder
  5. 1/4 tspRed Pepper Flakes
  6. 1/4 tspCayenne Pepper
  7. 1 canBlack Beans
  8. 1 canPinto Beans
  9. 1 canCorn
  10. 2Plum Tomatoes (if small add 1 or 2 more)
  11. 1 cupMexican Blend Cheese
  12. 1/2 cupChopped Fresh Cilantro (optional)

Cooking Instructions

    Preheat the oven to 350°F.

    In a large sauce pan add the ground turkey and 1 tbsp of extra virgin olive oil and cook until turkey isn't pink.

    Dice plum tomatoes and add to sauce pan along with 1/4 tsp of chili powder, 1/4 tsp of cumin, 1/4 tsp of red pepper flakes, 1/4 tsp of cayenne pepper, 1 can of corn, 1 can of pinto beans, and 1 can of black beans. Mix it all together in the sauce pan.

    Place all of the contents of the sauce pan into a 9x13 casserole dish. Add 1 cup of Mexican blend cheese to the top of mixture and spread evenly.

    Bake on 350 for 20 mins until the cheese is melted.

    For added flavor you can add a 1/2 cup of fresh cilantro after baked.
