The night before making re-hydrate the onion by putting in a cup and add enough water to cover. Place in fridge until ready to use the next morning. Before using drain off any remaining water.

Heat frying pan over medium heat.

Fry sausage & onion till brown.

Add chilies & tomatoes and saute for another minute.

Pour in beaten eggs and scramble everything together until eggs are fully cooked.

Heat tortillas by placing a moist paper towel on plate then 2 tortillas, then another moist paper towel, then 2 more tortillas, and one final moist paper towel. Microwave 20 seconds at a time until they are warm.

Cut 1 slice of cheese into thin strips and place down the middle of one a tortilla.

Spoon on 1/4 of the egg mixture and wrap to make a burrito. Repeat 3 more times and enjoy!
