Spray muffin pan with cooking spray.

Combine eggs, veggies, salt and pepper. (Optional: add cooked turkey sausage/bacon) Mix well.

Divide evenly among muffin cups.

Bake at 350 for 15 - 20 minutes, until knife inserted in center comes out clean.
