Cut eggplant in half. Scoop out inside meat. Chop and put to the side.

Season eggplant halves with olive oil, garlic powder and black pepper. Place in 350 oven.

Saute onion and garlic. Add chop meat and diced eggplant.

When meat is cooked, add tomato sauce. Season with garlic powder and pepper. Cook until sauce comes to a simmer.

Stuff 9.5 oz of meat (use small container to measure) into eggplant.

Place eggplant back in oven for 45 minutes.
