This is one of my families favorite meals. It seems like a lot of steps, but it all comes together fairly easily. I've tweaked this recipe from what I originally posted, because of changing up the way we eat, but it's still a fairly uncomplicated, from scratch recipe. This recipe makes alot, so you could cut the recipe in half for a smaller serving size...we usually just make the big batch so we have leftovers to snack on or have for lunch in upcoming days. You could also prepare it into two smaller pans, then freeze one and bake one.

Ingredients

50 minutes
8-10 servings
  • 1 tbsp.olive oil
  • 1/2yellow onion, diced
  • 3 clovesgarlic, minced
  • 1 lb.ground beef
  • 1 lb.ziti noodles
  • 1 can (28 oz.)unsalted crushed tomatoes
  • 1 can (14.5 oz.)unsalted diced tomatoes
  • 1 can (8 oz.)unsalted tomato sauce
  • 2 tsp.each sugar, dried basil
  • 1 tsp.each salt, Italian seasoning
  • 1/2 tsp.dried oregano
  • 1 container (15 oz.)ricotta cheese
  • 2 cupsshredded mozzarella cheese, divided
  • 1/2 cupshredded parmesan cheese

Steps

    In a large pot, heat the olive oil over med-low heat. Once its hot, add the onion and cook, stirring frequently, until translucent. Then stir in the garlic and cook another 2 or so minutes, until fragrant. Add the ground beef and cook until no longer pink, breaking it apart as you cook. Drain out any excess fat, if needed.

    Add all of the canned tomatoes, seasonings and sugar. Once it comes to a simmer, reduce the heat down to low, then let it simmer lightly for 15 or so minutes, while you cook the pasta.

    In a seperate large pot, heat up salted water over high heat. Once it comes to a boil, cook the pasta according to the package directions, then drain it, toss lightly with a splash of olive oil and return it to the empty pot. Toss the ricotta cheese with the hot pasta. Then stir in all but about a cup or so of the sauce and toss it all together.

    Preheat the oven to 350°F. Grease a 9x13" baking pan. Spread half of the pasta mixture out into the pan. Then sprinkle half the mozzarella and parmesan cheese over the top of it. Top with the remaining pasta, then spread the remaining sauce evenly over the top, especially around the edges. Top with the remaining mozzarella and parmesan cheese.

    Bake uncovered for 30 or so minutes, until heated through and the cheese over the top has started to brown. Serve immediately and enjoy!

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
