Ugly but Yummy Roasted "Stuffed" Red Bell Pepper

Steps

Roast Whole Bell Peppers in the oven at 425 for 25 minutes turning every 5 minutes.

While the peppers are cooking, mix all ingredients and cook on stove top until done. set aside.

Once Bell Peppers are cooked, place in a large bowl and cover with plastic for 10 minutes. This will loosen the skin.

After 10 minutes, pull off the stem and skin. Pull the pepper apart (2 or 3 sections), rinse off seeds and layer in casserole dish.

Spread meat mixture over peppers.

Sprinkle mozzarella cheese on top.

Warm until cheese melts.
