Santiago

I used it as a main course with some scrambled egg. Note that you can use tomato paste instead of tomato. You can also add some doritos on it for some crunch. I did this without any meat because I wanted to eat something meatless. Grounded beef or deer would be perfect in it. Serve with some rice !

Steps
- 1
Start by slicing the onions thinly. I used a mandoline but you can use a knife.
- 2
Open the can of mixed beans, without keeping the water and mixed with the paprika. I used twp tablespoons of paprika but it depends on how you like it.
- 3
Chop the bellpepper, tomato and carrots into small dice.
- 4
Mince the garlic glove
- 5
Put a tablespoon of oil in the pan and sauté the minced onion, garlic and tomatoes.
- 6
Then, add in the mixed beans and let it cook for about 2 mins. You can add some water if you like.
- 7
I like my veggies crunchy. So, before it's nearly cooked, I add the bellpepper and carrots and let it cook for 5 more minutes and it's done !
