Amy's Healthy Carob Chip Cookies

Tip: these are pretty much universal cookies. I like to change them up and add nuts, cocoa powder, lavender, almond meal, you name it. I think of it as the "perfect cookie base".
I have tried so many recipes that produce hard, cracker like cookies or puffy stale biscuit like cookies. I formulated this recipe to be consistent, flavorful, and universal.
The dough can be kept in the fridge for later cravings for up to a week, 3 months in the freezer. But trust me, it won't be around that long :)

Ingredients

  1. 1/2 cupSugar
  2. 1/2 cupBrown sugar
  3. 1 cupButter
  4. 1/4 cupVeggie oil
  5. 1unit Egg
  6. 1 tspVanilla
  7. 1 tspBaking powder
  8. 1 dashKosher salt
  9. 1 1/2 cupWhole wheat flour
  10. 1/2 cupWhole wheat pastry flour
  11. 1/3 cupOats
  12. 1 cupCarob chips
  13. 1/4 cupDried cranberries

Steps

30 mins
  1. 1

    Add softened butter, oil and sugars into a large bowl and mix until creamed. Then add vanilla and egg. Mix, do not over beat.

    Add all dry ingredients in a separate bowl.
    (Preheat oven to 375*)

  3. 3

    Add dry ingredients to the wet mixture in 1/2 cup increments.

  4. 4

    Add the carob and cranberries last.

  5. 5

    Place spoonful sized balls in rows on cookie sheet.

  6. 6

    Bake for 8-12 minutes, depending on the size and amount.

  7. 7

    Let cool and enjoy!!!

    *it is easy to sub whole wheat flour for white, carob chips for chocolate, cranberries for your favorite dried fruit, add cinnamon, nutmeg, or any other spice. Coconut flakes are amazing when added. Get creative!
