Crock Pot Red Beans and Rice
This is a modification of another recipe I found to make it a non-spicy version.
Steps

Soak beans overnight in water enough to cover by double

Put everything but the rice in the crock pot and stir. Cook on low for 8 hours or until the beans are soft. Add salt to taste at the end. The sausage and ham hock have salt in them so may not need much.

Use a masher or immersion blender to mash some if the beans to give it some creamy texture. Return to cook on high for one hour. This step is not required but I like the consistency it gives.

Serve over cooked rice. Add more hot sauce or copped green onions if you like. Also would go great with Corn Bread.
