Brown sausage over high heat

Once browned mix in flour. Grease in pan takes the place of butter

After flour is mixed in add milk/heavy cream. You can use more or less milk/cream based upon how much gravy you want.

Add salt/pepper/sage and stir till it starts to thicken.

Once thickened serve over whatever floats your boat.
