Spaghetti with eggs, tomatoes and olives

In Greece we have a recipe called Spaghetti from Mani. It's just spaghetti with mizithra cheese that is fried in lots of olive oil and then some sunny side eggs on top. Simple and perfect! I managed to make it even more perfecter 😂 by adding tomatoes and olives.
Mizithra is the best cheese for this, but I read that Romano is a good substitute if you can't find it.

We boil the spaghetti as per instructions on package

Meanwhile wash the cherry tomatoes and cut them in half

In a small frying pan put 1/2 cup olive oil and the mizithra cheese. Let it fry until golden

A few minutes before it's done, add the clove of garlic (thinly sliced) in the mizithra, to get the aroma!

Rinse the spaghetti and put back in the pot. Add the fried mizithra (everything from your pan) and mix well, to coat the spaghetti. Then add the cherry tomatoes and the olives and mix again.

In the same frying pan put some olive oil and fry your eggs. Make sure that the yolk stays runny!

Put your spaghetti in a plate and place an egg on top, drizzling with some of the olive oil from the pan. Repeat steps 6 and 7 as many times as needed!
