first boil the chicken with salt - this is to wash the chicken, remove all excess fat and smell

brown chicken with ginger; add salt and pepper

once water has disappeared, add patis, chicken stock and water; add bay leaves; let boil for 10mins

once boil, add onions and papaya; cook papaya til tender
