Issa plantain.week challenge and since I had plantains, eggs and other ingredients at home, I just had to join the pepper em gang with this winning easy breezy recipe...
Besides, my son has been begging for some for weeks now.

5plantains
4big Eggs
5big Tomatoes
Some green pepper
fresh pepper finely chopped
1big onions finely chopped
2-3garlic finely chopped too
Veggie table oil
salt
i added some.finely chopped smoked chicken breast
2carrots finely chopped

Sliced the plantain into circles and fry in veggie oil till golden brown.

In a pan add about a cooking spoon of oil,
Add in the chopped onion, garlic, tamatoes fresh pepper, green pepper, and stir fry for a bit...
lastly add the carrot and smoked chicken with a little salt for taste...
then when everything just very crushy and not dry bring it down.

In.a another bowl,
break all the eggs and whisky very well.

In a baking Pan or dish that is well buttered or creased with oil.
cover the bottom with some fried plantain, pour in the stired ingredients then some whiskied eggs...
i usually make it in layers,
plantains, stirred ingredients, eggs and
plantain till you exhausts everything...

Lastly bake in an already hot oven for say 5 mins to 6 mins or till the eggs set.
And its ready to serve.

Allow to cool for awhile, then cut and dish and enjoy...
