●For making kofta:-

Peel and grate suran and wash it nicely under running water(cover ur hands or wear gloves while grating suran to avoid itching).

Drain the excess water from suran by taking a small portion and pressing it between your hands.check there is no excess water inorder to avoid breaking of koftas.

Take suran in a big bowl.add all the ingredients given above for making kofta.

Make small balls of the mixture and deep fry the balls till golden in colour and crispy.
Keep aside. - 6
●For making gravy:-

Cut onion into slices and deep fry till golden brown in colour. Let it cool.

After cooling, add onion in a mixer jar. Add tomato puree, jeera and blend finely.

Take a cooker,add oil, add bay leaf and pour the ready mixture and cook till raw smell goes and oil gets separated.

Add spices and garlic-ginger paste.

Adjust salt as per taste.

Add water to the gravy to avoid burning of spices.

Cover the lid and wait for 2 whistles.
Add ready koftas and just mix. - 14
Do not add koftas while whistles else it will break and become soggy.

Garnish with green coriander leaves and enjoy.

Best served with roti or naan.
