Ingredients

  1. 3 lbbeef round
  2. 6leeks
  3. 4carrots
  4. 1 headgarlic
  5. 1 bunchthyme, rosemary, bay, sage
  6. 1Olive Oil
  7. 1kosher salt
  8. 1ground black pepper
  9. 1broth or water
  10. 1medieval black pepper sauce

Cooking Instructions

    preheat oven to 400°F

  2. 2

    slice leeks and carrots to 1/4 inch

  3. 3

    place veg, garlic and herbs in roasting tray - drizzle with olive oil and liberally sprinkle with salt and pepper

  4. 4

    place meat over veggies

  5. 5

    cook in oven for 1 hour, thermometer at 145°F is medium

  6. 6

    baste veggies if look dry

  7. 7

    let sit for 15 min. slice thinly, cover in sauce
