place veg, garlic and herbs in roasting tray - drizzle with olive oil and liberally sprinkle with salt and pepper

place meat over veggies

cook in oven for 1 hour, thermometer at 145°F is medium

baste veggies if look dry

let sit for 15 min. slice thinly, cover in sauce
