Ingredients

4 servings
  1. 1 mediumBell Pepper (Cored, Seeded, and sliced into 1/2 in strips
  2. 1 mediumOnion
  3. 1 lbSkinless Chicken Breasts, rinsed and patted dry
  4. 1 tbspExtra-Virgin Olive Oil
  5. 2 tspDried Greek Seasoning Blend
  6. 1/4 tspSalt
  7. 1/4 cupPlain fat-Free Yogurt
  8. 1/4 cupMayonnaise
  9. 1 tbspPrepared Mustard (We used Regular Yellow Mustard)
  10. 1/4 tspSalt
  11. 4Whole Round Pitas
  12. 1/2 cupCrumbled Feta Cheese
  13. 1Optional: Cucumbers, Tomatos (both sliced) and Kalamata olived

Steps

  1. 1

    Spray slow cooker with nonsitck cooking spray.

  2. 2

    Place bell pepper and onion in bottom. Add chicken and drizzle with olive oil.

  3. 3

    Sprinkle evenly with greek seasoning and salt.

  4. 4

    Cover and cook on high 1¾ hours or until chicken is no longer pink (vegetables will be slightly crisp)

  5. 5

    Remove chicken and slice. Remove veggies with a slotted spoon.

  6. 6

    SAUCE: Combine yogurt, mayo, mustard, and ¼ tsp salt in a small bowl. Whisk till smooth.

  7. 7

    SAUCE: Warm pitas according to pacakge. Cut in half and layer chicken, sauce, veggies, and feta. Top as desired.
