Ingredients

30 mins
  1. 2 lbpork roast tenderloin
  2. 5 mediumpotatoes
  3. 1/2onion
  4. 1/2 cupfresh parsley
  5. 1 cupvegetable stock
  6. 1 cupbutter
  7. 1 tbspdried parsley
  8. 1 tspItalian seasoning
  9. 1 dashpaprika
  10. 1garlic salt
  11. 1salt & pepper
  12. 1water
  13. 1 tbspbrown sugar

    preheat oven to 250

  2. 2

    in large skillet heat a bit of vegetable oil, sprinkle salt on all sides of tenderloin, sear in skillet on all sides

  3. 3

    in baking pan add stock, a bit of water, sliced onions, salt & pepper

  4. 4

    remove seared tenderloin from skillet and rub with oil, brown sugar, paprica, salt & pepper. place in baking pan and put in oven, bake for 2 hours, do not cover. baste with juice in bottom of pan every 30 mins.

  5. 5

    cut potatoes, put in large bowl, add oil, chopped fresh parsley, garlic salt, sat&pepper, mix well, place in separate baking pan with a half inch of water. do not cover, place in oven alongside tenderloin for 2 hours

  6. 6

    after 2 hours remove tenderloin from oven, baste once more, set aside, start boiling water for fresh corn cob.

  7. 7

    remove potatoes, return to large bowl, add butter, dried parsley and italian seasoning, mix well, return to baking pan to keep warm.

  8. 8

    remove corn from boiling water, slice tenderloin into 1/3 of inch thick.. serve and enjoy

stay@home wife and mom of 3, and one on the way...from north little rock arkansas....self taught cook. love to create and experiment with all kinds of ingredients, really like exotic foods, seafood especially. I love real greek food! german and authentic mexican as well....like to eat healthy. I also love hardy foods, meat, bread, and gravy, stuff like that. my favorite fruit is mango, although im allergic I eat them anyway. I dont bake much, because I dont like to measure but iv begun experimenting with my oven as well. my favorite fish is salmon. I like spicy foods. there is only a few things I wont eat, lima beans, brussel sprout, red green or yellow bell peppers, creamed corn. I am very adventurous when it comes to trying new foods, but I wont eat anything rotten, dont do fat or bone marrow. I love hearts gizzards livers and neckbones. I love the show bizarre food with andrew zimmern....im addicted to cheesecake lol. one of my favorite meals is cajun style pork neckbones and ox tail soup with cabbage. wish to persue a culinary job or tattoo artist in the future.
