  1. 1 lbsausage
  2. 4 lbchicken
  3. 2 cuponion
  4. 3 lbShrimp
  5. 1/2 cupgreen onion
  6. 1 cupbell peppers
  7. 1 cupcelery
  8. 2 clovegarlic
  9. 1 canstewed tomatoes
  10. 20 ozfrozen okra
  11. 2 tbspvinegar
  12. 2 tbspparsley
  13. 1/2 tspthyme
  14. 1/4 tspcayenne pepper
  15. 1 tspsalt
  16. 3bay leaves
  17. 2 tbsphot sauce
  18. 1 tbspCreole seasoning
  19. 9 canchicken stock
  20. 1 cupflour
  21. 1/2 cupoil
  22. 2 tbspbacon dripping
  23. 1gumbo file
  24. 6Dungeness crabs (cooked)

    And a tablespoon of baking fat to medium-high heat and brown the chicken. For about 8 minutes, remove, cool, and refrigerate till later

  2. 2

    In the same pan as the chicken, melt 1 tablespoon of bacon fat, and brown the sausage. About 8 minutes, set aside

  3. 3

    In the same pan, make a roux. Over medium heat, whisk flour and oil in leftover bacon fat from Browning. Stir constantly for 20 minutes until the color of the peanut butter

  4. 4

    Add celery, bell peppers, onion, and sausage tothe roux. Cook 10 minutes, add garlic, and remove from heat. Stir till finish cooking/bubbling. Add tomatoes, cook 5 more minutes.

    In a separate, larger pit, boil broth

  6. 6

    Add the roux vegetable mixture to the boiling broth. mix in seasonings

  7. 7

    Low heat, simmer for 1.5-2 hours, stirring occasionally ata constant simmer. No top.

    Remove bones and skin from chicken. Add chicken and some gumbo file.

  9. 9

    In another pan, heat a tablespoon of oil over medium-high heat and add okra and vinegar, cooking 15 minutes

  10. 10

    Stir okra into gumbo, add Worcestershire sauce

  11. 11

    Add shrimp, cook 10 minutes

  12. 12

    Heat crab

  13. 13

    Serve and enjoy
