Ingredients

  1. 2 lbpumpkin, peeled & cubed
  2. 6 clovegarlic
  3. 1 mediumonion thinly sliced
  4. 4 tbspolive oil, extra virgin
  5. 1 tsproasted ground cumin ( geera)
  6. 1 tspkosher salt to taste
  7. 2 tspbrown sugar
  8. slicehabenero or scotch bonnet pepper( optional)

Steps

  1. 1

    Scrub the outside of pumpkin, pat dry, peel, scrape out seeds and cube

  2. 2

    Grate garlic, slice onion and hot pepper if using

  3. 3

    Heat oil in pot over medium heat, add onion and hot pepper ( if using) ,cook until onion is ligth golden brown add garlic and cook until translucent

  4. 4

    Add pumpkin stir to cost with oil, reduce heat to low,cover and cook till tender, stir occassionally so it doesn't stick

  5. 5

    When pumpkin becomes tender use the back of a spoon and mash until it is a paste like consistency and there are no chunks

  6. 6

    Cook until any liquid from pumpkin has evaporated and it begins to stick to the pot

  7. 7

    Stir in cumin

  8. 8

    Serve with roti, pita or naan

  9. 9
