Cooking Instructions
- 1
Preheat oven to 425.
- 2
Clean parsnips. I leave the skin on. Slice parsnip lengthwise like french fries and put into a large bowl.
- 3
Coat with oil then add salt/pepper (and/or rosemary, red chili flakes, cayenne, or cumin, garlic cloves, etc) for more flavor.
- 4
Roast parsnips for 10-15, then stir or flip to roast the other sides for an additional 15-20 min. The thicker the parsnip, the longer the roasting time. When done, let cool for 5 min. Use any dipping sauce or none at all.
- 5
Temp and roasting varies depending on altitude.

Confession: In 70+ years of life, I never ate a parsnip. 😳 As a foodie and a vegetable lover, don't know why that is. So I was excited to finally give them a try when they came up in the Cookpad challenge. Still, since it was something new, I just wanted a small amount to sample, and something simple and quick to prepare. This recipe fit that criteria, PLUS it included a seasoning blend I'd never even heard of: Dukkah. These were very good! Even my sister, who's definitely NOT a veggie eater, loved them. My only "complaint" is they don't get crispy, and crispy is how I like my fries. But we'll for sure be trying more parsnip recipes in the future!#GoldenApron23 Maggie Conlon -

When it comes to home fries, I prefer them crispy on the outside. Therefore, I like to dice them into small bite size pieces to ensure can be air fried evenly all the way through and are crispy on the outside and soft on the inside. How do you like yours? Air Fry with Me -
