  1. Sauce
  2. 1 cupdry sherry
  3. 1 3/4 cupchicken broth
  4. 1/4 cupapple juice concentrate
  5. 1 tbspwater
  6. 1 1/2 tspcorn starch
  7. 1/2 cupgranny smith apple, chopped
  8. 1/2 tspthyme, chopped
  9. Veal
  10. 4 ozveal medallions
  11. 1/4 tspsalt
  12. 1/4 tsppepper
  13. 2 tspvegetable oil

  1. 1

    Bring sherry to a boil in medium saucepan over medium-high heat until reduced to 2 tablespoons (about 8 mins)

  2. 2

    Add chicken broth and apple juice concentrate

  3. 3

    Cook until reduced to 1 cup (about 12 mins)

  4. 4

    Combine water and corn starch in a small bowl.

  5. 5

    Add corn starch mixture and bring to a boil.

  6. 6

    Cook for 1 minute, stirring constantly.

  7. 7

    Remove from heat.

  8. 8

    Stir in apple and thyme.

  9. 9

    Cover and keep warm.

  10. 10

    Sprinkle veal with salt and pepper.

  11. 11

    Heat oil in medium skillet over medium-high heat.

  12. 12

    Add veal.

  13. 13

    Cook 3 mins on each or until lightly browned.

  14. 14

    Serve veal with sauce.
