Ingredients

  • 2 smallaubergine eggplant peeled and cubed
  • 5 mediumzucchini sliced in half and chopped
  • 1 tspgaram masala
  • 1 tspturmeric
  • 1 tspsalt
  • 1 1/2 tbsprice wine vinegar
  • 1/4 cuphoisin sauce
  • 2 tbspminced garlic
  • 1 smallonion cut in half sliced
  • 1 1/2 tbspsugar
  • 1/4 cupwater
  • 1 tspcornstarch
  • 1 tspground black pepper

Steps

  1. 1

    heat some vegetable oil in a pan add onion spices garlic cook for 2 minutes add eggplant and zucchini cook stirring occasionally for 2 minutes add vinegar and sugar let simmer covered for 5 minutes

  2. 2

    mix water and cornstarch have extra water ready it may thicken to much if so add water to thin
