Steps

Take the mustard seeds, fennel seeds, fenugreek seeds, and dry red chillies and grind them into a powder

Heat some mustard oil in a wok and shallow fry the potatoes with some salt and turmeric. You may also deep fry them.

Keep them aside.

Again in the same pan, heat some mustard oil and add the kalaunji and cumin seeds. Let the aroma comes out.

Add the ginger paste, turmeric, fry for 30sec and then add the tomato puree. Mix them very well and cook it till the raw smell of tomato disappears.

Add the amchur powder and the fried potatoes.

Stir them altogether.

Add the powdered masala that was made before. Saute it very well

Add 2 cups of water. Let it boil

Add some salt according to your taste and then cover the wok with a lid and simmer the flame.

After 10min check whether the potatoes have become soft. If it is so, then add some sugar according to your taste

Mix them very well and add some coriander leaves.

Remove it from the flame. Your achari dum aloo is ready to be served.
