Place rice milk and apple cider vinegar in a measuring cup and let it sit for 5 to 10 minutes.

In a large bowl whisk eggs.

Stir in remaining ingredients and mix thoroughly.

Place pie plate on a cookie sheet to prevent spillage in oven.

Bake for approximately one hour. To check if ready, insert a thin knife in center of quiche . If the knife comes out clean, it is ready.
