Combine all the ingredients in a large bowl and stir well.

Leave in the fridge for a few hours. This allows the flavours to infuse and the warmth of the chilies to come out.

Once marinade has matured enough remove from fridge. Place four large salmon or chicken fillets in the bowl and ensure that the meat is fully coated.

Return the bowl to the fridge and allow the meat to marinade for at least two hours.

Cook meat as desired.
