Desalt the cod using the traditional method. When ready to cook, cut it into sticks or cubes.

Prepare the red bell peppers by roasting or frying them.

To make the Orly batter, mash the garlic with a pinch of salt in a deep plate or bowl until it forms a paste. Add the eggs and saffron, then mix well. Stir in the beer, baking powder, and flour. Once the batter is smooth, sprinkle in the parsley finely chopped. Cover with plastic wrap and let it rest in the refrigerator for at least 30 minutes. After resting, coat the cod pieces in the batter.

Heat plenty of olive oil in a skillet. Fry the cod pieces one by one until golden brown.

Place the fried cod on paper towels to remove excess oil.

Serve the cod bites with a strip of red pepper on top.
