Ingredients

6 servings
  1. 2 largecarrots (peeled and cut into chunks)
  2. 1 mediumonion (peeled and cut)
  3. 1chicken stock cube
  4. 1 pinchsalt
  5. 3 tbspolive oil
  6. 4medium/large potatoes depending on how thick you want the soup (peeled and roughly cut)
  7. 2 literswater
  8. 250 gramsGreen beans
  9. 1 largeripe tomato
  10. 2eggs

  1. 1

    In a large pan add the water, carrots, potatoes, salt, stock cube, onion and olive oil.

    Bring to the boil for 25-30 minutes.

    Boil the eggs separately.

  4. 4

    Once cooked, let it sit and cool down for around half an hour.

  5. 5

    Blend all the ingredients until it has become a smooth consistency.

  6. 6

    Return to the heat.

    Once it starts boiling again add the Green beans and tomato and cook for a further 8-12 minutes. I normally add another dash of olive oil here.

    Add more water if needed along the way. check seasoning before turning the heat off.

  9. 9

    Peel the shell of the eggs and slice. Add to the soup once heat is off.
