My mother-in-law used to make this for my husband when he was a boy. My daughters loved it so much that it was instituted as a celebratory breakfast, served on the first and last day of school, birthdays, and such. My oldest daughter now carries on the tradition by making rice pudding for herself to celebrate grad school accomplishments!

Ingredients

  1. Rice
  2. 1 1/2 cupRice
  3. 3 cupWater
  4. 1 1/2 tbspButter
  5. 1 1/2 tspSalt
  6. Pudding
  7. 3/4 cupSugar
  8. 3 tbspCorn starch
  9. 1/4 tspSalt
  10. 3 cupMilk
  11. 3 largeEgg yolks, slightly beaten
  12. 3 tbspButter, softened
  13. 3 tspVanilla extract

Steps

    RICE

  2. 2

    Pour 2 cups water in microwave-safe dish. Cover.

  3. 3

    Microwave on high 6 minutes, or until boiling.

  4. 4

    Add rice, 1 tablespoon, and 1 teaspoon salt. Cover.

  5. 5

    Microwave on 60% for 15 minutes.

  6. 6

    Remove from microwave and allow to steam while preparing pudding.

  7. 7

    PUDDING

  8. 8

    Mix sugar, cornstarch, and salt in 2 quart saucepan.

  9. 9

    Stir in milk gradually.

  10. 10

    Cook over medium heat, stirring constantly, until mixture thickens and begins to boil.

  11. 11

    Boil and stir 1 minute.

  12. 12

    Stir at least half of mixture into beaten egg yolks. Return egg mixture to hot sauce pot.

  13. 13

    Remove from heat, stir in vanilla and butter.

  14. 14

    Mix with rice in large bowl.

  15. 15

    Serve immediately or cool slightly and refrigerate.
