Ingredients

  1. 1 packagesprepared polenta
  2. 1 cangreen enchilada sauce
  3. 1 lbground beef
  4. 1 smallchopped onion
  5. 1 packagestaco seasoning
  6. 1 1/2 cupgrated mexican cheese blend
  7. 1 smallcan green chillies
  8. 1 smallcan sliced black olives
  9. 1/3 cupsalsa
  10. 1 canrefried beans
  11. 3/4 cupwater

Steps

30 mins
  1. 1

    saute onions and brown meat (drain fat)

  2. 2

    add water and taco seasoning and cook until done

  3. 3

    slice polenta in 1/4 ins. rounds

  4. 4

    pour 1/2 of the enchilada sauce in bottom of a casserole dish

  5. 5

    place sliced polenta on top of sauce

  6. 6

    cover with meat mixture

  7. 7

    cover with refried beans and green chillies

  8. 8

    sprinkle with half the cheese

  9. 9

    if you have polenta left put it on

  10. 10

    sprinkle with black olives

  11. 11

    spread salsa

  12. 12

    cover with rest of the enchilada sauce

  13. 13

    cover with rest of the cheese

  14. 14

    bake at 375 for 45 mins -1 hour
