For the sauce: cook onions and garlice in olive oil. Add ground meat. Add tomato sauce, sweeten with sugar if you like. Add italian seasoning or parsley, basil, oregano. Season with salt and pepper. Simmer and set aside.

For the roux: melt butter in pan. Add flour, a spoon at a time. Gradually add milk and mix well until there are no lumps. Add 2/3 of grated cheese. Set aside

To assemble: mix 2/3 of meat sauce and pasta. Put in a baking dish. Top with remaining sauce and then pour the roux on top and sprinkle with grated cheese.

Put in a preheated oven. (350F) bake for 20-30 mins or until sauce bubbles and cheese brown. Serve
