Preheat the oven to 150?C/300F7gas mark 2. In a skillet, saute the onion
in the oil, add the pork, and cook a little longer. Sprinkle on the flour and
gradually add the apple juice and water. Add the apple and thyme. Bring to
the boil, stirring continually while the sauce thickens. Add a little extra water
if sauce is too thick. Place in an ovenproof dish with a lid and cook in the
oven for 30 minutes. Add the vegetables and potatoes, return to the oven,
and cook for a further 30 minutes until the vegetables are soft. The meat
will be very tender and can be mashed a little with the potatoes, if needed
The vegetable pieces can be removed from the sauce and eaten with the
fingers. This dish contains everything your baby needs for a complete meal
but if you wish you could serve it with a green vegetable, such as broccoli.
