Take all your dry ingredients down to salt in bowl and whisk to combine. In separate bowl mix room temperature eggs and sugar together. Then add oil mix well until combined and smooth. Then add your mashed banana and vanilla blend in. Take your dry ingredients and sprinkle evenly over wet, then whisk in briskly with wide whisk. With as few strokes as possible,do not overmix. Fill muffin cups about 2/3 to 3/4 of the way bake at 375°F, for 16-22 minutes. May sprinkle with granulated sugar for crunchy tops.
