  • 1 lbGrass Fed Ground Beef
  • 1 mediumOnion
  • 15 ozChili or Kidney Beans, w/ liquid
  • 15 ozBlack Beans, w/ liquid
  • 15 ozWhole kernel corn, w/ liquid
  • 8 ozTomato Juice or Sauce
  • 2 cupWater
  • 14 ozDiced Tomatoes
  • 10 ozDiced tomatoes with green chilies
  • 1 packagesTrader Joe's Taco Seasing (estimate)
  • 2 ozBlack Olives drained & Sliced
  • 2 ozGreen Olives drained and sliced (optional)
  • Garnish
  • 1Shredded cheddar, green onion, tortilla chips, sour cream, etc.

Steps

  1. 1

    Brown ground beef and onion in a large skillet and drain grease.

  2. 2

    Add beef and all ingredients to a large pot and bring to a boil. Simmer for 1 hr. Add water if too much liquid has evaporated during simmer. Can also be cooked in crock pot on low for 7-8 hrs.

  3. 3

    Garnish and eat up!
